Over the past 14 years in hospitality, I have become an accomplished chef, restaurant & banquet manager, as well as a sociable bar tender. Our restaurants consisted of 3 separate dining areas: Our breakfast cafe with 30 tops, a fresh soup and sandwich deli with 40 tops, and a 90 top fine dining restaurant with full bar. It would not be uncommon for us to service banquette receptions of 100 people or more.
